Family Is a Key Ingredient in Neelys' BBQ Success

Grandma Jean's potato salad. Grandma Rena's deep-fried pork chops and quick vegetable soup. Aunt Faye's chicken with scallion dumplings. Momma Daisy's peach and blackberry cobbler. Mamma Neely's Sock-It-to-Me Cake. And Memphis-style barbecue ribs.

Those family recipes have been passed down to the Food Network's saucy stars Patrick and Gina Neely and are included in a new book they're touring the country to promote, Down Home With the Neelys (Knopf, $27.95). More than 120 recipes, leading off with their famous barbecue seasoning and sauce, are introduced with a bit of family history, photos and humor.

"We're no different from the typical family from the South," says Pat, 44. "There, everybody can tell you about a dish that their grandmother, mother and aunt made.

"We were home-schooled in cooking," he says.

The Neelys are best known for their barbecue, prepared "dry," with a mixture of spices rubbed onto the meat, or "wet," basted with a sweet and tangy sauce — and sometimes both — in their three restaurants in Memphis and Nashville.

Tony Neely, Pat's brother, offers tips in the book for backyard barbecuing this summer. Most important: Go low and slow, cooking away from the fire using indirect heat. When seasoning meat, earlier is better, he says, even the night before. And if you throw a slab of ribs on the grill, cook them curl-side up to allow juices to gather in the center of the curl. Flip once, halfway or three-quarters of the way through cooking.

Pat and Tony's ribs won a contest for the best in Memphis in 1997, which led to their appearance on the Today show. But the Neelys' barbecuing isn't limited to traditional ribs, chicken and another Memphis favorite, pulled-pork sandwiches. Pat and Gina have shared recipes for barbecue spaghetti on CBS' The Early Show and barbecue nachos on ABC's Good Morning America.

But pairing food and family, which includes Pat and Gina's daughters, Spenser, 20 (from Gina's previous marriage), and Shelbi, 14, is more important than being famous, says Pat: "Food is the centerpiece of relationships."

A 'Slow' progressive dinner --at your own pace-- with a taste of the many restaurants featuring local food in town. This event is organized around the idea of moving from one participating restaurant to another, each one focusing on local ingredients. On June 17th from 5:30 to 11:00 pm, each restaurant will make two appetizers using local ingredients with a portion of the proceeds donated to Slow Food Nashville. Go at your own pace - have apps at Miel then move on to Watermark, then close it out with a 'slow taste' at Ombi. Or, go to one place, and stay for dinner - it's up to you! (Only the 'Slow' apps will be part of the program). Miel, Watermark, Fido, tayst, Ombi, F. The 2009 Music City Hot Chicken Festival will once again be celebrating Nashville's original culinary tradition - hot chicken - on July 4th, 2009.

This free event features the unique southern flare of local restaurants, professional & amateur cooking competitions, inflatable jumpys for the kids, the Yazoo Brewery beer garden, and of course, legendary Nashville music.

The Music City Hot Chicken Festival, approaching its 3rd year, has already been recognized as one of the most unique food festivals in the Southeast. The festival's attendance has grown from 1500 people in 2007 to over 5000 people last year. And it’s all for a great cause! Bring your family and friends and help raise money for St. Luke’s Community House, since food is the very foundation of St. Luke's services. Volunteers deliver around 100 hot meals to area seniors every week day through their mobile meals program. Through a partnership with Second Harvest, St. Luke's distributes emergency food boxes to hundreds of our neighbors each year. With major support from the Bank of America Foundation, St. Luke's began offering culinary classes as part of their job skills training program that serves men and women trying to find a better job.

All 5 competing chefs will be using cookware provided by LeCreuset and ingredients from our Whole Foods Market pantry. The Golden Fork award will be bestowed upon the winning chef along with a set of LeCreuset cookware. The 4 remaining LeCreuset cookware sets will be donated back to St. Luke’s Community House.

Nashville's Arnold's Tops Beard Foundation's 2009 America's Classics Winners

If Jack and Rose Arnold seemed a little distracted today during the lunch rush, it's probably because a film crew from the James Beard Foundation was lurking by the buffet, filming the daily ritual at Arnold's Country Kitchen. The 28-year-old meat-and-three on Eighth Avenue has been chosen as one of America's Classics by the venerable keepers of culinary tradition. Each year since 1998 the James Beard Foundation Awards Committee has identified small regional restaurants, watering holes, shacks, lunch counters and down-home eateries that have carved out a special place on the American culinary landscape. The Arnolds will join this year's four other America's Classics winners in New York on May 4 for the James Beard Awards Gala at Lincoln Center. "It still doesn't seem real," a breathless Rose said on the phone [March 11] during a break in the filming, though she sounded almost as emotional about having all three sons working together in the kitchen. At the black-tie ceremony--the food world equivalent of the Oscars--the video tribute to Arnold's will air, and Jack and Rose will receive the coveted James Beard Foundation medallion. Other winners: Breitbach's Country Dining, Sherrill, Iowa; Totono's, Coney Island, N.Y.; Mustache Bill's Diner, Barnegat Light, N.J.; Yank Sing, San Francisco, Calif.
